Can you believe Thanksgiving is only a week away??
We usually double dip on Thanksgiving. We go to my husband’s aunt’s house, and then also go to my mom’s afterwards. It gets a bit crazy and tiring, but it’s awesome that we get to see so much of our family all in one day!
This year I’m bringing dessert to our aunt’s gathering, so I decided to try out a new recipe.
No-Bake Dulce De Leche Cheesecake
Dulce de Leche cheesecake just sounded like a great idea after we made breakfast for dinner the other night. Our friend Dani came over and made dulce de leche + strawberry crepes (amazing!), so ever since then I’ve been wanting to try this cheesecake out.
Plus, being that I’m Latina and Italian, AND was born in New York, it just seemed like a perfect combo of two things I love!

No-Bake Dulce De Leche Cheesecake Recipe
But, I did make a few changes to make this even easier:
- I used pre-made graham cracker crust
- I used two blocks of cream cheese (someone suggested this since the original recipe could turn out runny)
- I used store bought whipped cream (also to avoid it being runny).
Delicious! But SOOOO rich. I think using the two blocks of cream cheese kept it from being runny. Because some people said that they had to put it in the freezer to get it to firm up, but mine was just fine in the fridge. However, this made for a very RICH cheesecake.
There were some other amazing looking recipes that came up on Google. I just chose the simplest one because…well I just needed simple for this one!
Three Ingredient Peanut Butter Cookies
I’m honestly not sure if I might switch up my dessert plans at the moment. I could always go back to my trusty Three Ingredient Peanut Butter Cookies (they contain no flour and are AMAZING). Plus I add mini chocolate chips (because who doesn’t love PB + Chocolate together?!?). Our gluten-free friend Tori introduced me to these and I’ve been in love ever since! And everyone that tries them is ALWAYS impressed. (Regardless of whether or not they’re into the whole gluten-free thing. Believe me when I tell you, they’re GOOD.
I’ll already be making those for a potluck, AND for my mom’s house! Should I just simplify my life?? Ha!
